Behind Cured
The journey to Cured began with an "aha!" moment in 2000 when past owner Dan Carr traveled to Italy in search of real, simple, and truly authentic food. During his travels through small Tuscan towns, he experienced firsthand the artistry of expert meat curers using age-old techniques. The rich flavors and deep traditions left a lasting impression, inspiring a vision to bring that same heritage of handcrafted meats to the Pacific Northwest.​​

From Vision
to Reality
In April 2008, that vision became reality when Cured opened its doors in Leavenworth, WA, just below Visconti’s restaurant. Initially, the shop featured gourmet meats from outside producers, carefully selected to capture the quality and tradition of Tuscany’s specialty meat shops. The breakthrough came with pancetta—a product we simply couldn’t find at the quality we wanted for our restaurants. By mastering the perfect blend of spices and the art of salt-curing, we created a pancetta so rich and flavorful, it was to die for.​
Growing
Our Craft
Driven by a passion for old-world techniques, we took the next step—remodeling our facility, securing USDA permits, and crafting all of our own salumi in-house. With a state-of-the-art setup featuring fermentation rooms, grinders, slicers, smokers, and freezers, we poured our expertise into every product. As demand grew, so did our operation, leading us to expand into a larger USDA-certified facility in Wenatchee, WA, ensuring we could continue delivering the highest quality cured meats to our customers.
A New
Chapter Begins
In early 2025, after years of dedication to Cured, founder Dan Carr made the decision to shift his focus back to his restaurants. This led to the opportunity to pass the torch, and in February 2025, Scott and Bonnie Toland—longtime advocates of high-quality meats—stepped in to continue the legacy.
